Peach Cobbler

Autumn is fast approaching. The leaves have turned a deep shade of red and gold. The wind has become dry and chilly. Even with the sun shining, you will probably backtrack home to get your jacket when the wind hits you or feel miserable for having been deceived by the bright beautiful but not very warm sun. And I have turned on the heater in the house because I don’t particularly fancy the idea of wearing my sweater and socks indoors. WIth all this chill in the air, I wanted to savour the last of the ripe peaches in my fridge. If you read my peach upside-down cake entry, you’ll know I go cuckoo over these fruits. So what do peach cuckoo’s do with their peaches? Make them into cobblers. Well…they don’t mend shoes, but they sure mend a cold tummy
MMMM…YUM!
Ingredients:
4 peaches - with/without skin (I used both types), pitted and sliced
1/2 cup tightly packed dark brown sugar (for sprinkling)
1/2 cup unsalted butter - melt under slow fire until bubbling
Dry :
1 cup all purpose flour
1/4 tsp salt
1/2 tsp cinammon powder
1 tbsp baking powder
3/4 cup granulated sugar
Wet:
3/4 cup milk
1 tsp vanilla essence
Method:

Preheat oven to 350F.

Melt the butter and set aside.

Slice peaches and set aside.

In a bowl, combine all the dry ingredients. Whisk lightly to combine.

In a separate bowl, combine the wet ingredients.

Pour the wet ingredients into the dry. Whisk briskly to combine and make a smooth batter.

Pour the melted butter in a 9 inch pan/bakeware.

Pour the batter in next. Do not stir.

Place the peach slices on the batter. Arrange whichever way you want.

Sprinkle the dark brown sugar evenly all over the peaches.

Bake in the over for 45min - 1hr. The sides will pull away from the pan and the top will be a golden brown.

Serve warm with vanilla ice cream or on its own.
The finished product using a mix of peeled and unpeeled peaches. If you’re having guests over, it would be a good idea to bake this in a glass bakeware so that you can serve it straight from the oven and avoid spoiling the look of the cobbler.
Here’s a close up of the cobbler it’s sides pulled away from the pan. Peach arrangement by my son. He’s learning about pattern sequencing for Maths and I thought I’d let him arrange the peaches and try out pattern sequencing with the peeled and unpeeled peaches. See…2 with skin 1 without…and a few which just didn’t fit nicely anywhere:)
Tips:
-
1/2 cup butter = 4 oz = 8 tbsp = 1 stick

To save time, preheat oven, melt butter and prepare peaches at the same time.

You can substitute the peaches with pears if you’re not a peach fan.

You can reduce or increase the sugar. But this was just nice for my family.

I have a crisper drawer full of peaches right now. I am with you–I love them. I have made two cobblers with the peaches I bought this year. My favorite is the recipe I have from a cookbook I had as a child. It has old fashioned oats in the topping.
I am going to try yours as it looks DELICIOUS. Beautiful photos. I’ll let you know how it turned out.
I just got a recipe for 5 minute chocolate cake made in the microwave in a mug–it is a one or two serving cake. It is so good I have already made it three times. (I have had it for 2 days). I just remembered the recipe is posted on my blog.
